I'm not usually this organized.

1. Two quarts of chili, frozen.

2. Two chicken breasts, pounded, marinated in Italian dressing, and frozen; to grill and add to a yummy salad (easy: salad-in-a-bag of your choice, grilled chicken, candied almonds, craisins, any other veggies you like, tossed with your favorite vinaigrette dressing).

3. Slivered almonds, toasted & candied and ready to add to the salad mentioned in #2.

4. About half a pound of ground beef, browned with onions, frozen; ready to mix with refried beans for tostadas.

5. About a pound of browned ground beef mixed with kidney and black beans and spices and salsa, and frozen, to make taco salad.

6. Two chicken breasts, cut in chunks and sauteed with mushrooms, garlic, and oregano, mixed with alfredo sauce and frozen, ready to heat up and serve over bowtie pasta.

7. Thinly sliced chicken breast, cooked with strips of white onion, and salsa; frozen, for use in chicken quesadillas.

8. Several dozen oatmeal chocolate chip cookies. Frozen.



I spend two straight days preparing food for our trip, and I think we're going to eat pretty well, don't you?

Wowie! So impressive. I am wondering if I could hire you to do the same for me. Not for a big motorhome trip. Just because every night when dinner time rolls around, I feel too gross to make anything. Everything sounds great. You're making me rethink my Carbonara dinner plans for tonight.

I always plan on being this organized and then can never find the time to actually do it. Have fun!
