1. Mix together in a bowl: 1 can of canned chicken chunks, a can of black beans (drained), a couple spoonfuls of sour cream, about 1/4 can of Macayo's red enchilada sauce, and some shredded cheddar.
2. Get a stack of about 6-8 flour tortillas; fill them with the mixture and roll them up and put them in a casserole dish, seam side down. Like enchiladas, you know. This amount fits pretty well in an 8x8 casserole.
3. Using the same bowl (because why get another one dirty?) mix the rest of the enchilada sauce (or less if you don't want it so spicy) with another couple of spoonfuls of sour cream; pour this saucy delight over the top of the enchiladas. (I don't like it as spicy so I end up using about 1/2 -2/3 of the can altogether.)
4. Top with more shredded cheddar; bake at 350 for 20-30 minutes or until it's bubbly on the edges and the cheese starts to brown.
5. Top with more spoonfuls of sour cream (if you're like me) and devour. Yum.
These are SO easy because the main ingredients come from cans. And, who doesn't have tortillas and cheese laying around, begging to be made into something creative? Also, you can switch up the fillings -- put in different kinds of beans or none at all, different kinds of meat, green sauce instead of red, jack cheese; you name it. These puppies are versatile!
I first got this enchilada idea from my brother, who by the way was very embarrassed when I told him I posted that last year birthday song on here. His reaction, "Oh man, that thing is SO lo-fi!" When he sends me something hi-fi I'll be sure to post it!
In other news, we saw the movie JUMPER at the Superstition dollar theater tonight. There is a lot of jumping in this movie. The good news: Superstition only charges $2 per ticket, whereas our "regular" dollar theater, the Pollack in Tempe, charges $3. I spent our savings on a box of Junior Mints. Mmm. The bad news: you know how awful Hayden Christensen was in Star Wars (the newer ones)? Well, he plays the main character in JUMPER. We and our friends we were out with decided that Hayden Christensen went to the same acting school as Keanu Reeves. In all honesty though, Mr. Christensen was okay; the main problem with this movie was that they took a decent idea and just didn't execute it very well. The plot, such as it was, jumped around as much as the jumpers. Overall, I give it 2 1/2 stars (out of 5) and would recommend it to your Blockbuster online queue; it's worth at least a queue spot but probably not a full-price rental.

I usually do chicken with a white sauce (cream of chicken, plain yogurt, green chiles), so it'd be nice to mix-it up a little.

I have a similar recipe (did I ever send you the Elmer cookbook?) It's just black beans (2 cans), some salsa, cheese, cumin, garlic, corn tortillas and GREEN sauce. I LOVE the green sauce. Just in case you feel like changing it up sometime.
I'm going to try yours when I get my new oven in. We just ripped ours today!
OMGosh. I couldn't agree more! I laughed out loud when you said that Hayden and Keanu went to the same acting school. Hey, at least they are hot. Hayden more so than keanu in my opinion. But...there is NO question that acting is not their greatest strength.
Seriously, Hayden Christensen? I don't get him at all.
