The picture doesn't do them justice. They're the color of sunset. For some reason their color is more vibrant than last year's peaches and I think they may be just too pretty to eat.
I agree - it is so lovely. Do you use any fruit fresh or citric acid in your canning to keep them looking that pretty? Cuz they start to not be so pretty after a year or two...even with the fruit fresh.
I use Fruit Fresh, and the ones I have from last year still look pretty good. But last year they were just yellow, and not so orangey pink as these this year. I was so happy to see the 14 quarts I canned last night sitting on my counter to great me this morning :)
I don't put any Fruit Fresh in my syrup, I just soak the cut peaches in it while I'm peeling/cutting more. If they have a few minutes to soak it seems to work out pretty well; I noticed with my pears that a few jars are darker because those pears had just been dipped and not soaked.

Excuse me dear, but they're to look at too! What else are you supposed to be doing before you eat them; close your eyes?
